How creamed honey is made — the Dyce Method

At Southern Gold, we use the Dyce Method, a time-tested process developed in the 1930s that remains the gold standard for crafting premium creamed honey.

We begin with our pure, raw South African honey — unblended, unheated, and full of natural enzymes, pollen, and flavour. The honey is gently warmed just enough to dissolve any large crystals, then cooled to the perfect temperature for controlled crystallisation.

A small amount of pre-made creamed honey, known as a starter seed, is then mixed in. This seed contains countless fine crystals that guide the rest of the honey to crystallise at the same microscopic size. Over several days, the honey is slowly stirred and kept at a steady, cool temperature.

Nothing is rushed. No additives, no shortcuts — only careful attention and patience. When it’s ready, the honey has a soft, velvety texture that stays perfectly smooth indefinitely.
